Today, we explored the art of preparing Lovo, one of Fiji's most traditional dishes, cooked in an underground oven. Perfect for special occasions, Lovo is all about celebrating life, love, and community. It's a beautiful way to come together, with friends and family contributing to the preparation of this grand feast.
The process begins with digging a pit to create a natural oven. Large river rocks are heated over a wood-lined fire. Once they're white hot, they’re covered with green banana or palm leaves. Then, layers of deliciousness are added: root crops like dalo, cassava, and sweet potatoes, followed by leaf-wrapped proteins such as chicken, beef, pork, and fish, topped with veggies like palusami, pumpkins, and breadfruit. The food is then buried and slow-cooked to perfection, taking 1-2 hours.
Once uncovered, this smoky, tender meal is served on banana leaves, offering a taste that's simply unforgettable.
